Just omit the bbq sauce for this recipe, because the fresh pork itself is really the star.

- 1 pork loin Farmer John 1-2 pounds
- 1 12 oz bottle of root beer
- 1 tsp liquid smoke
- salt and pepper to taste
- 1 cup ricotta
- 1/4 lemon zested
- 1 tsp honey
- 1 cup cranberry sauce or jelly
- thyme for garnish
- 25 crostinis toasted
- balsamic glaze

For the ricotta

- Put the pork loin in the slow cooker with the root beer and the liquid smoke. Cook on low for 6 hours.
- While pork is cooking, whip ricotta with lemon zest and honey. Toast crostinis in some butter.
- To assemble, top crostini with ricotta, then a spoonful of cranberry and then shredded pork. Drizzle with balsamic glaze. Garnish with thyme.
