Shredded Pork Crostini with Cranberry and Ricotta

It’s kind of the perfect bite, you guys!  And, it’s not too late to make this as a slam dunk app for your Thanksgiving meal.  When I’m entertaining, it’s a priority for me to use products that are fresh and made with no artificial ingredients.  That’s why Farmer John California Natural Fresh Pork is my go-to! It’s all-natural, high-quality, and super versatile, making it the perfect base for any style of dish – whether you’re entertaining guests this season or looking for a delicious weeknight meal.

cranberry pork biteI used the Farmer John Fresh Pork Loin in this epic shredded pork crostini with cranberry and ricotta because it’s extra tender and juicy. It’s guaranteed to be a crowd pleaser!  — just adding in a can of root beer and a little liquid smoke!  So easy, so delish!  Here’s a cooking video I did using a pork butt (that cut works too!).  Just omit the bbq sauce for this recipe, because the fresh pork itself is really the star.

  • 1 pork loin Farmer John 1-2 pounds
  • 1 12 oz bottle of root beer
  • 1 tsp liquid smoke
  • salt and pepper to taste
For the ricotta
  • 1 cup ricotta
  • 1/4 lemon zested
  • 1 tsp honey
  • 1 cup cranberry sauce or jelly
  • thyme for garnish
  • 25 crostinis toasted
  • balsamic glaze

Instructions
  1. Put the pork loin in the slow cooker with the root beer and the liquid smoke. Cook on low for 6 hours.
  2. While pork is cooking, whip ricotta with lemon zest and honey. Toast crostinis in some butter.
  3. To assemble, top crostini with ricotta, then a spoonful of cranberry and then shredded pork. Drizzle with balsamic glaze. Garnish with thyme.
