Did I mention RANCH AND CHEESE STUFFED?  Um, yeah.  This is legit tailgating, party food.  Dude Food.  Put it out for the ladies who lunch.  Just make it.  And eat it. And you’re welcome!

Bacon Wrapped Pickle Poppers a Delicious Appetizer or Dinner Recipe

I would LOVE to take credit for this recipe, but I gotta give my girl, Caytlin McCleery, all the kudos on this.  We recently worked together on a grilling segment in Salt Lake City.  You guys, this girl knows her way around grills and smokers like no one’s business. Check out her Facebook page Cayt’s Meats and Meals for lots of amazing grilling advice and recipes.

What makes this such a killer recipe is the combo of the cream cheese, shredded cheddar and the hint of ranch.  Um, and, the BACON.  Oh. Mah. Gawd.  Once you slice those big ‘ol dill pickles in half and scoop out the middles, you just fill them with the cheesy, ranch goodness and then wrap in that thick cut bacon.  What’s up, delicious?  Oh, hi!  I want you to be the star of my par-tay, bay-bay!

  • 6 Dill Pickles slice in half lengthwise
  • 8 oz Cream Cheese full fat
  • 2 Tb Ranch Hidden Valley Packet
  • 1/2 cup shredded cheddar
  • 12 slices bacon thick cut (Smithfield or Farmland)
Prep Time 15 minutes
Cook Time 30 minutes

Instructions
  1. Slice large dill pickles in half lengthwise. Scoop out middle of each pickle half.
  2. Mix softened cream cheese with ranch and shredded cheddar.
  3. Spoon cheese mixture into dill pickle halves. Do not overfill. Spooning enough to fill the insides is perfect.
  4. Wrap each stuffed pickle with thick cut bacon.
  5. If grilling: Place directly on smoker grate and set temp to 350°. Bake for 30-40 minutes until you have the desired doneness with your bacon. If cooking in oven: Bake for 30-40 minutes at 350° until you have the desired doneness with your bacon. Turn over in oven once after 15 minutes.
