Ingredients
Ahi Tuna Marinade
1-2poundssushi grade Ahi Tunadiced in 1 inch cubes
1/3cupsesame oilor hot chili oil
1/4cupTamari or Ponzu sauce
3Tbpineapple juice
2Tbrice vinegar
3Tbchili garlic sauce
2tspfresh ginger
1Tbtoasted sesame seeds
2garlic cloves minced
1/4cupchopped scallions
1limejuice and zest from whole lime
Poke Bowls
1cupsteamed rice
1cupdiced mango
1/2cupdiced jalapeno
1cupshiitake mushroomssauteed in a bit of butter or olive oil
1avocado diced
1 cupred cabbage chopped
1cupshredded carrot
1 cupsliced cucumber
1TbFurikake spice mix
wasabi and pickled ginger
Instructions
Whisk together marinade ingredients and add ahi. Cover and refrigerate for 30 minutes to an hour.
Build each bowl with a base of rice, then add the veggies and fruit and top with ahi. Sprinkle with furikake and garnish with wasabi and pickled ginger.
