Caprese Salad and Skewers with Balsamic Glaze
A light and fresh caprese salad that you can also put on skewers with an earthy, balsamic glaze.

Ingredients
  • 1/2cup cherry tomatoeshalved or quartered
  • 3/4cup fresh mozzarellaquarter mozzarella balls if you are using them
  • 3/4cup fresh basilloosely chopped
  • 2Tb balsamic glazedrizzled on salad at end (I used Bertolli brand)
  • 2Tb olive oildrizzled on salad at end
  • kosher saltto taste
Instructions
  1. Chop tomatoes, fresh mozzarella and fresh basil and toss together. Drizzle olive oil and balsamic glaze on top. Sprinkle with a pinch of kosher salt. If using mini skewers, keep cherry tomatoes whole and alternate between mozzarella, tomatoes and basil on skewer. Serve with balsamic glaze on side.
