Keto Florentine Meatballs with Cheese Sauce
A Keto/Low Carb Re-do of one of my favorite Rachael Ray recipes. Tender turkey meatballs with fresh spinach and a cheese sauce to die for!

Ingredients
For the Meatballs
  • 1.3 pounds ground turkey1 package
  • 2cups packed fresh spinachPut in food processor and pulse until finely chopped
  • 1 medium diced onion dividedset aside 3 Tb for the sauce
  • 3 garlic cloves minced
  • 1 egg
  • 1/4cup heavy cream
  • 1/2cup Parmesan cheese
  • 1/2cup shelled pistachiosGrind in food processor until they are fine crumbs
  • salt and pepper to taste
For the Sauce
  • 3Tb diced oniontaken from the one onion for meatball batter
  • 2Tb butter
  • 1 1/2 cups heavy cream
  • 1cup chicken stock
  • 110 oz Bag of shredded Italian cheese
  • 1/2tsp freshly grated nutmeg
Instructions
For the Meatballs
  1. Preheat oven to 400. Place turkey in a bowl and make a well in the middle of it. Add the spinach, all but 3 tablespoons of the onion, garlic, 1 large egg, 1/4 cup heavy cream, ground pistachios, grated Parmesan and a pinch of kosher salt and pepper. Mix well. Form into 12 large balls and drizzle with extra-virgin olive oil. Arrange on a nonstick cookie sheet and roast for 30 minutes, or until cooked through.
For the Sauce
  1. While meatballs are in the oven, heat a small sauce pot over medium heat. Add a drizzle of extra-virgin olive oil and 2 tablespoons butter. Melt butter, add remaining finely chopped onion and cook 2 minutes then add 1 1/2 cups cream. Bring to a bubbly simmer and let cream thicken for about 4 minutes. Add 1 cup stock. Bring liquid up to a boil then stir in shredded Italian cheeses. Season the sauce with salt, pepper and nutmeg, turn heat to lowest setting until meatballs are done cooking. Top meatballs with sauce and enjoy.
